I'm currently doing some research into the S-3B (post 2003 ops) and although it is a four seat aircraft, some of the information I have states that the crew totalled 3 other states 4.
If it is 3, was the 4th seat left empty?

Just to confuse the matter, tanker crews were just 2.

Any advice would be great.

Avionics updates reduced the number of crew required from four to three. I quote from Naval Technology.com article - "with the change in roles brought about by the end of the Cold War and the reduced submarine threat, the S-3 underwent a major avionics and weapon systems upgrade programme and the crew was reduced from four to three - pilot, co-pilot / tactical coordinator (COTAC) and tactical coordinator (TACCO)". As you say, the tankers had a crew of two.
