Couple of tips, watch the flutings (vertical ridges) when masking black and white stripes as paint can bleed under any tape if not pushed well in. If possible paint white background rectangles behind the "United States" and "SA-205" decals on the first stage as the black background tends to show though the pale decals.

A tip I came across recently, but have yet to try out, may help too - once masked, spray a light coat of clear varnish before painting, in order to help seal the masks to the surface of the model and prevent (or at least minimise) bleed-under.

As I say, I've yet to try it, so I can't tell you if it actually works!

Just a couple of things to be aware of about the base of the 1st stage - Airfix got the orientation of the engines wrong, the baseplate needs to be rotated 45 degrees to correct this ( just needs the locating tab to be removed to allow this ). Secondly if you're building Apollo 7 remove the four fairings over the 1st stage engines - these were present only on the SA201 and SA202 test flights.

Oh, and the 2nd stage should have three ullage motors, not two ( the Saturn V version only had two and Airfix didn't alter that mould for the 1B kit ). Strictly speaking the 2nd stage attitude control pods should also be smaller too.
